Let's be honest — the name is intriguing enough. The popular Asian fusion restaurant with three locations in Vancouver, has set its sights on San Francisco. Owner Greg Edwards wants to launch the cult-favorite in the former Masa's connected to the Executive Hotel Vintage Court with a total of 83 seats.
The bites consist of Filipino classic meats mixed in with Hawaiian sensibility, creating a mouthwatering masterpiece; think pork belly fried rice and, of course, bao—steamed buns or sandwiches stuffed with various fillings. In time, we can expect a full Hawaiian-style weekend brunch, creative cocktails, 16 beers on tap, and homemade ice cream. Yum.
Though with space's history of rather-failed restaurant experiences, Greg is certain about his choice to bring Bao Down to the bay, "I'm honored to be able to work in [the former Masa's] kitchen," he told Hoodline.
What's the ultimate goal for this Bao filled eatery? Bao Down will hope to have 50 locations along the West Coast. Now that's dreaming big.
