You might not be able to hightail it to Spain this weekend, but Over Proof’s third concept in their quarterly beverage series, Este Oeste (“East West”), is the next best solution: featuring Chef Collin Hilton’s Spanish-inspired menu, you’ll feel like you’re there—without the outrageous airfare.
The is in reference to the strong winds of southern Spain, the very gusts that influence the aging of Sherry wines in that region. Over Proof will also be featuring a variety of gins, but the best part of the night is Hilton’s bright yet rustic menu, with dishes such as Blistered Pepper and Melon Gazpacho and Brown Butter Poached Prawns. One of the most notable cocktails of the night, Señor 'Txotx', has both stars of the third quarter – gin and sherry, with a hint of honey, spice, and cider to add depth and a kick to this drink.
Este Oeste also means “this or that,” which is perfectly fitting for Over Proof’s rotating bar concept—not only is the menu and featured alcohol different, but they will also flip the interior to reflect light and breezy Mediterranean vibes.
